5-Ingredient SUPER SIMPLE Vegan Pancakes (+ Bonus Recipe: Banana Pancake Variant)

I STAND CORRECTED

I repeat, I stand corrected.

I was already madly in love with my pancakes from two breakfasts ago, and I didn’t think I could adore any other pancake recipe more, but boy was I wrong. Before I continue, I must say that both pancake recipes produce pancakes that taste phenomenal. So why do I like this new pancake recipe more? Because they were thicker, fluffier, easier to flip, and definitely crispier on its edges. Taste isn’t an issue here, it simply is a matter of structure, texture, and whether or not You are kiddy (like me) and enjoy building a tower of pancakes. If You were thinking: ‘firm… crispy… YES TO EVERLASTING YOUTH’, this recipe is for You.

Wet Ingredients:

125ml plant-based milk
1 tbsp melted coconut oil

Dry Ingredients:

1 tbsp coconut sugar
1/2 tsp baking powder
1/2 cup whole wheat flour
1/2 tsp vanilla powder/ flavouring (OPTIONAL)

*This set of ingredients makes up 1 serving.

Instructions:

  1. In a large bowl, sift together the flour, baking powder, and sugar. Make a well in the centre and pour in the wet ingredients. Whisk until smooth.
  2. Heat a lightly coconut-oiled frying pan (or simply use a non-stick pan like I did) over medium-high heat. (Make sure it is sufficiently heated before You start making Your pancakes!) Pour/ scoop the batter onto the pan, depending on how big You’d like them to be.
  3. Optional: Warm Your oven and keep Your plate of pancakes in it while You’re making more pancakes.
  4. Topping options: Dairy-free yoghurt, syrup (I used maple!), fruits, nuts, seeds, desiccated coconut, etc.

BONUS RECIPE: Vegan Banana Pancakes

Wet Ingredients:

1 mashed medium banana

Dry Ingredients:

1/2 tsp baking powder
1/2 – 1 tsp cinnamon
1/2 tbsp coconut sugar
1/2 cup whole wheat flour
1/2 tsp vanilla powder/ flavouring (OPTIONAL)

*This set of ingredients makes up 1 serving.
