I was sitting at the dining table as I heard the most amazing cacophony of crackling granola in my oven. Scores, if not hundreds, of granola clusters, were screeching and whistling as if in ecstasy at the excitement of being used as toppers for a million different breakfasts.
Doesn’t this picture of a condensation-covered nice cream bowl just scream, “Humidity?!” The joys of Singapore ahha!
1.5 cups Oats
3 tbsp desiccated Coconut
3/4 cup Pepitas (aka. Pumpkin seeds)
3/4 cup chopped/ slivered/ ground Macadamia
9-10 tbsp Grade A Maple Syrup
*Mix the dry ingredients well before adding the Maple Syrup. Get Your hands in the bowl and don’t hesitate to get them really sticky. (You can lick them later, hey!) Press them into big balls of granola and crumble them onto a parchment-lined baking tray.
15 mins first;
Use a fork to shuffle the granola clusters around;
10 more mins.
