3-Ingredient Coco-Maple Granola

I’ve come to the conclusion that one really only needs a few things in life to be happy: something to do, something to look forward to, someone to love and a constant supply of really good, really crunchy granola. Here’s how I make mine…

Dry Ingredients:

1.5 cups Oats
4-5 tbsp desiccated Coconut
2 tbsp Psyllium Husk (optional)
2 tbsp crushed Flaxseeds (optional)

Wet Ingredients:

3 Medjool Dates (optional)
7-8 tbsp Grade A Maple Syrup

*Mix the dry ingredients well before adding the wet ingredients. Get Your hands in the bowl and don’t hesitate to get them really sticky. (You can lick them later, hey!) Press them into big balls of granola and crumble them onto a parchment-lined baking tray.

Temperature:

150°C

Time:

15 mins first;
Use a fork to shuffle the granola clusters around;
10 more mins.

How to enjoy?

Drenched in a bowl of corn flakes and cold, plant-based milk;
Non-dairy yoghurt/ Smoothie bowl/ Oatmeal toppers;
As it is, because simplicity is perfect.
