Bowl-tastic Moment #1


My plant-based protein-boosted lunch after a session of Body Pump madness at the Gym yesterday:

Roasted carrots and bell peppers, chopped persimmons and pomegranate seeds (for added sweetness and that oh so wonderful crunch) on a bed of spelt-and-buckwheat button ‘shroom stew. Lined with a large, baked-till-slightly-crunchy kale leaf and topped with a generous sprinkle of coriander.
